The Process of Making Sencha Tea

Several studies confirmed that green tea drinkers are less likely to have some cancers, such as skin cancer, pancreatic cancer, and stomach cancer. However, its association with colorectal cancer and lung cancer is still controversial, as shown by conflicting results of studies that have been done regularly by experts. Some experts agree that drinking green tea also lessens the likelihood to develop heart disease in most cases. This is because of the role of antioxidants present in certain tea, called catechins, in preventing the excess deposit of cholesterol in the blood vessels and in fighting free radicals, therefore, they mostly recommend green tea.
Boosting the immune system of a person is another of the numerous benefits of the this green tea. This is also attributed to antioxidants that are present in the green tea. In fact, these catechins are said to be much better than Vitamins C and E regarding effectiveness in enhancing immunity.
Another benefit of the Sencha green tea is that it aids in relaxation since it is often associated with meditation and yoga even in the ancient times. However, it can also stimulate the mind without being anxious or hyperactive. It also contains caffeine, a known stimulant.
Aside from these health benefits, tea may also be used in other ways at home. One of the great benefits is its use in cleaning as well as cooking. Also, green tea may be used to water the plants, while its leaves can be used to make a litter box smelling fresh.

1. What Is Anji Bai Cha?
The tea was discovered in 1982 but can be traced back to 1041-1048 A.D during the Qing period. A legend about this green tea was recorded in a Chinese book called “Da Guan Cha Lun” pointing it out as a plant that has jade white leaves. It continued to be a legend until a single tea bush was discovered in An Ji County in China.
It has relatively short harvesting period and is not widely planted as other varieties of tea, and as such, is one of the most expensive teas particularly in China. It has a soothing and refreshing taste that has a hint of amazing orchid sweetness in its distinctive pleasant aroma. It has the freshest appearance compared to other tea as its leaves are narrow and pale greenish with a fold on its length.
2. Making Process Of Anji Bai Cha
Only the tender and most pure leaves of bai cha are picked. Thereafter the tea is spread in shades away from direct sunlight so as to enhance the quality of tea and make them much easier to dry. The tea is subsequently heated in a moderate heat so as to deactivate enzymes but leaves the pleasant aroma intact. After heating the tea is rolled using a hand for at least three minutes so as to form wrinkled strips. Finally, you can dry the leaves at 100 degrees for 10 minutes and thereafter spread for fifteen minutes. At this point, the tea is cooled, packed and ready for brewing.
3. How To Brew Anji Bai Cha
For the best and incredible result, it is advisable to brew this tea at a low temperature since it's a very delicate yet so sweet a variety. You can steep the tea at around 80degrees - 175 degrees to reach a perfect infusion. The steeping time recommended for steeping should be three minutes but can be gradually adjusted to match your taste.
4. How To Store Anji Bai Cha
In order to preserve the sweet flavor and aroma of this tea, it should be stored only when the moisture content of the dried leaves is not above 6% during processing. It should be stored in an environment with relatively low temperature such as those in ice storage room or freezer where the temperatures are as low as 5. Once packed you can store in a dry cool place.
5. What Is The Health Benefit Of Anji Bai Cha?

Chunmee Green Tea Popular For Its Flavor And Health Benefits
Tea lovers are always looking for different types of teas to experiment with and one of the more popular Chinese green teas worldwide is the chunmee green tea. It is a non-fermented green tea and so retains the health benefits and the nutrients of the green tea.
What Is Chunmee Green Tea?
China is well known for a number of teas like oolong tea, loose leaf tea, rose tea and has a long history of tea cultivation for centuries. It has also developed new varieties of teas like the chunmee green tea after experimenting with the processing of the tea. Most of this tea is grown in the tea estates of China. It produced after brewing is yellowish green in color, is known for its sweetness and flavor. It is known for its astringent taste which cleans the mouth.
Production Process Of Chunmee Green Tea
This tea is mostly made in China and has a very distinctive production process compared to other teas. After plucking the tender tea leaves from the tea estates in China, the leaves are hand rolled and pan-fired, giving the tea leaves a unique shape and flavor. In some places, tea making machinery may be used to process the tea leaves and make the tea. The dried tea leaves are then packed according to the demand of the customer. The quality of tea is checked at every stage of production with the most sophisticated equipment possible.
Brewing Tips For Chunmee Green Tea
Before brewing the chunmee green tea it is advisable to first assemble all the equipment for making the tea like the brewing pot, cup, teaspoon, tea scoop, tea tongs. There are various options for selecting a teapot for making this tea depending on availability. A ceramic or glass pot can be used in most cases as it is easily available. However, a glass pot is preferred as the person brewing the tea can watch how the tea leaves are getting slowly unfurled while brewing and releasing their flavor in the tea. For the traditional Chinese method of brewing of the tea, a sand fired teapot has to be used.
After adding one or two teaspoons of tea to the teapot, to brew the tea, water at a temperature of 90-degree centigrade should be added to the tea leaves. This tea leaves should be kept in the brewing teapot for one or two minutes so that flavors and nutrients of the tea are seeping into the water. It is very important to note that boiling water should not be added to the tea as it will destroy the flavor and nutrients of itself, the tea will be bitter and difficult to drink. If required flavors and essential oil can be added to the brewed tea for those who like it.
